Long and silky, this harmonious red offers fine-grained tannins swathed in flavors of ripe black cherry puree, raspberry ganache, tarry smoke, coffee liqueur and Asian five-spice powder. Dense and focused, with a persistent finish. Drink now through 2033. 20 cases imported.
The name Zýmē, from Greek, means “yeast” and the winery logo represents a grapevine leaf and a pentagon, symbol of five basic elements: man-vine-earth-sun-water. Tradition and innovation are the two Zýmē’s wines complementary tracks. In Celestino Gaspari’s heart, wine is yeast for the mind, and a yeast that grows the Zýmē project.
